Whole Grain Pancakes

  • 2 eggs
  • 4 egg whites
  • 1 cup Daisy Brand Cottage Cheese
  • 2 tablespoons Daisy Brand Sour Cream
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/3 cup whole wheat flour

Beat eggs and egg whites with a wire whisk in a medium size bowl until frothy. Gently fold in cottage cheese, sour cream, oil, salt, and whole grain flour. Spray a large non-stick skillet with non-stick spray. Heat to medium low. Spoon batter onto skillet to make approximately 4 inch pancakes. Flip when bubbles appear in the middle. Remove when second side is golden brown. Garnish with fresh berries and syrup.
