Spinach Cheese Frittata

- 2 tablespoons extra virgin olive oil
- 1/2 cup chopped red onion
- 1/2 cup chopped red bell pepper
- 1/2 teaspoon minced garlic
- 8 large beaten eggs
- 1 cup Daisy Brand Cottage Cheese
- 1/4 cup whipped cream
- 10 ounces frozen loose leaf chopped spinach, thawed and drained
- 8 slices cooked bacon pieces
- 1/4 cup shredded Parmesan cheese
In 10-inch non-stick skillet combine olive oil, red onion, red pepper, and minced garlic. Cook over medium heat, stirring frequently, until onions and peppers soften slightly (3 to 4 minutes). Meanwhile, in large bowl stir together eggs, cottage cheese and whipping cream. Add spinach and bacon; stir until well combined. Pour egg mixture into skillet with onions and peppers. As eggs begin to set, gently stir eggs from edges to center (about 1 minute). Cover; continue cooking over medium heat until eggs are slightly soft on top (9 to 11 minutes). Remove from heat. Sprinkle top of frittata with shredded Parmesan cheese. Place under broiler for 1 minute or until cheese browns slightly and frittata puffs slightly.
