Spinach and Cheese Calzones

- 1 cup warm water (105 to 115 degrees F)
- 1 package active dry yeast
- 1 tablespoon extra virgin olive oil
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 3/4 cups all purpose flour
- 1 cup Daisy Brand Cottage Cheese
- 1 cup shredded Mozzarella cheese
- 1 10 ounce package frozen loose leaf chopped spinach, thawed and drained
- 1/2 cup chopped red onion
- 1/2 cup chopped red bell pepper
- 1/4 cup shredded Parmesan cheese
- 1 egg
- 1/2 teaspoon minced garlic
- 2 tablespoons fat free half and half
- 2 cups marinara sauce
In large bowl place water, yeast, olive oil, salt and sugar. Mix well. Add flour; mix until dough forms. Let rest 10 minutes. On well floured board, turn out dough and knead until top is smooth, about 30 turns. Place dough in greased bowl, cover, and let raise for 1 ½ hours or until double in size. Meanwhile, well drain the cottage cheese. Stir together cottage cheese, Mozzarella cheese, spinach, red onion, red pepper, Parmesan cheese, egg, and garlic; set aside. Once dough is raised, punch down and separate into either 6 or 8 pieces. Let rest 5 minutes. On well floured board, pat each dough piece into about a 6-inch disk, being careful not to tear center. Place about 1/3 cup filling. Fold over top of dough and pinch edges to seal. Brush tops of calzones with half and half. Bake for 23 to 25 minutes at 400 degrees or until calzones are golden brown. Serve with marinara sauce.
