Cottage Cheese and Pear Crostini

Cottage Cheese and Pear Crostini

  • 1 ripe firm pear
  • 20 slices French baguette
  • 1/2 cup crumbled blue cheese
  • 1 cup Daisy Brand Cottage Cheese
  • 1/4 teaspoon ground ginger
  • 3 tablespoons fresh basil cut into strips

Core and slice pear into 20 thin slices. Heat the oven to 400°F. Lay baguette slices on cookie sheet. Lightly spray tops with cooking spray. Bake 10 minutes or until slightly crisp. Remove from oven; leave on cookie sheet. Top each slice with 1 teaspoon blue cheese and a pear slice. Return to oven for 3 minutes or until cheese is melted and warm. Remove to serving platter. In small bowl, mix cottage cheese and ginger. Spoon a scant tablespoon of mixture over pear. Top with a few basil strips. *Optional: Top with pecan halves for added crunch.
