Light Broccoli & Cheese Pasta

- 1 heaping cup penne pasta
- 1/2 cup broccoli flowerettes
- 1 cup Daisy Brand Cottage Cheese
- 1/2 teaspoon cracked black pepper
- 4 tablespoons shredded Parmesan cheese + 1 teaspoon
Cook pasta and broccoli according to package directions. Toss cottage cheese with the hot pasta, hot broccoli, black pepper and 4 tablespoons Parmesan cheese. Divide into two oven-safe bowls and sprinkle each with 1/2 teaspoon of Parmesan cheese. Lightly broil for approximately two minutes or until slightly browned and serve. *Optional - try adding diced cooked chicken or other vegetables for a heartier meal.
