Cottage Cheese & Mixed Greens Salad

  • 1/2 cup sliced toasted almonds
  • 8 cups Romaine lettuce
  • 16 Cherry tomatoes
  • 1 cup dried, sweetened cranberries
  • 4 tablespoons vinaigrette
  • 4 leaves radicchio
  • 1 cup Daisy Brand Cottage Cheese

Toast almonds by heating over medium-high heat in a pan for about 3 minutes or until golden, tossing occasionally. Combine Romaine lettuce, Cherry tomatoes, cranberries and vinaigrette. Toss. Portion into 4 bowls. Place one leaf of radicchio on each salad as if it were a cup. Fill with 1/4 cup of cottage cheese. Top with toasted almonds.
