Asian Chicken Salad Lettuce Cups

- Time To Table: 1 Hour 30 Minutes
- Serves: 6 to 8
- 8 medium lettuce leaves
- 1/2 cup Daisy Brand Sour Cream
- 3 tablespoons Hoisin sauce
- 1/2 teaspoon salt
- 1/4 teaspoon chili or curry paste
- 2 cups diced cooked chicken
- 1/2 cup diced celery
- 1/4 cup diced red onion
- 3/4 cup Daisy Brand Cottage Cheese
- 4 teaspoons chopped salted peanuts
Wash and dry lettuce leaves. In large bowl, combine sour cream, Hoisin sauce, salt and chili paste; mix well. Add chicken, celery and onion; mix well. Lay lettuce leaves on serving platter. Top each with about 1/4 cup chicken salad. Top with heaping tablespoon cottage cheese. Sprinkle with peanuts. Fold up lettuce to eat.
